Research Summary:  This study aims to design and develop a locally fabricated reverse osmosis system for the concentration of pineapples juice. Consequently, the condition setting for the concentration of pineapple juice using the newly fabricated reverse osmosis system will be optimised.  The physicochemical properties of concentrated pineapple juice in terms of pH, titratable acidity, vitamin C, total soluble solids, moisture contents, element contents, color of pineapple juice, microbial load and sensory evaluation will also be determined in this study.  The reverse osmosis system will be designed and fabricated by a local company through assembling several components such as feed tank, pump, pump regulator, pressure gauge, temperature gauge, membrane filter, product tank and etc. Response Surface Methodology from Stat-Ease Corporation will be used as a software to generate model and optimize the process conditions for concentrating of pineapple juice.  The expected outcomes of this study may include a new locally fabricated reverse osmosis system with optimum conditions for concentrating application of pineapple juices.  Also, this study might improve the post harvest handling technology of pineapple fruit and possible for other fruits as well.
